Mixed Fruit Summer Pie

What does one do when she doesn’t have enough of any one fruit to make a proper pie? Why, make a mixed fruit pie, of course!

Mixed Fruit Summer Pie- how to use up the ends of seasonal fruit!After an hour of huckleberry hunting with friends, I only managed to keep a couple of cups out of my children’s bellies. Certainly not enough for a full pie. I did have peaches around- but perhaps only another two cups worth. So, I decided that I would just use up all the ends of my seasonal fruit. A mish-mash of berries, peaches, and apples went into this pie, and it was definitely a winner.

Here’s the recipe:

  • Double pie crust
  • 6 cups mixed fruit
  • 1/4 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1/4 cup honey
  • Butter (optional)

1) Prepare your fruit. Some mixing of textures is desirable in this pie, but make sure that the majority of your fruit won’t turn to mush. I sliced my apples and peaches into 1/4″ slices, and then added my berries. Feel free to adjust mixture to your liking.

2)Toss fruit with the flour, cinnamon, nutmeg, salt, and honey.

3) Lay your bottom crust into the pie pan. Heap with the fruit mixture. Add pats of butter over your fruit if desired. (And who wouldn’t want that?!?)

4) Cover with top pie crust. Crimp edges and cut slits in the top for venting steam.

5) Bake at 400 for about 35 minutes, or until filling is bubbly and crust is golden brown.
