Fruit & Veggie Snowman Pancakes

I am NOT a pinterest-worthy cook or crafter. Prepare to cringe as you look upon my “nailed-it!”-worthy pancakes! But maybe YOU can make them look really pretty and take a nice staged picture and send me a link to it, okay? Thanks. 😉

We watched the old Frosty the Snowman videos over the past few days with James, and he enjoyed them so much we decided to have a pancake breakfast to match. These are easy-peasy to mix up and make to your family’s liking.


1) Choose your pancake recipe. I like to use sourdough pancake recipes, but for this morning I wanted to include a vegetable in the batter. I tried this recipe for sourdough pumpkin pancakes. If that’s not your thing, you could try any number of fruit or veggie pancake batter recipes. How about banana pancakes or zucchini pancakes?

2) Cook your pancakes in snowman shapes. You can do two or three “snowballs” in graduated sizes, connected or separate. How you want to build your snowman is completely up to you.

3) Decorate your snowman. I used blueberries for the eyes, mouth, and buttons, chopped beets for rosy cheeks, a roasted baby carrot for the nose, and a strip of bacon for a scarf. Be creative with whatever ingredients you have on hand!

You can also try putting your decorations on before you flip your pancake to bake them into the batter, but your faces will be a lot messier afterwards. However, it will spare you from your children picking off all the blueberries and leaving the rest for you to eat. Weigh the pros and cons. 😉

BTW, these are sun-tanned snowmen. If you want to make them really white, try spreading plain yogurt, unsweetened coconut flakes, or homemade whipped cream on top for different snowy effects.

Voila! A fun way to get your fruits and veggies in first thing in the morning! And, even though my snowmen weren’t perfect, my kids enjoyed gobbling them. Yours probably will too!
